Sometimes you just need a chocolate fix. This quick and easy coconut cream pudding definitely satiates that desire while contributing to good health. Made with creamy, fluffy coconut cream, this pudding has a gently sweet, rich chocolate and coconut flavor. It takes a mere five minutes to whip up, so it’s ready in practically no time at all.
Chocolate Collagen Coconut Cream Pudding
Beyond the coconut cream and chocolate in this coconut cream cream pudding, there is a a super nutritious ingredient that I threw in–collagen. Now, this collagen is completely optional, but it definitely ups the nutritive value and adds a source of protein.
In addition to collagen, I included an optional flavoring insertion. You can use Young Living Vitality essential oils or just about any kind of flavoring extract. Some ideas include:
- Orange Vitality essential oil or orange extract
- Peppermint Vitality essential oil or peppermint extract
- Cinnamon Bark Vitality essential oil or cinnamon extract
- extra vanilla extract or vanilla beans
- hazelnut extract {think Nutella!}
- caramel flavoring
- maple flavoring
- raspberry flavoring
- cherry flavoring
Chocolate Collagen Coconut Cream Pudding
Ingredients
- 1 can {about 13 oz.} coconut milk
- 2 tbsp. cocoa powder
- 1-1/2 tsp. collagen
- 1 tsp. pure vanilla extract
- 2 tbsp. powdered coconut sugar {THM & SF Variation: 2 tsp. THM Gentle Sweet Blend or Truvia} {more or less to taste}
- 1/4 tsp. salt
- 4 drops Young Living Vitality essential oil or 1/4 tsp. flavoring extract of choice, optional
Instructions
- Pop the can of coconut milk in the refrigerator for an hour or two so the cream rises to the top {if your can was stored somewhere cool like a basement, it might already be separated and ready to go}.
- Open the can and skim off just the thick coconut cream.
- Using a handheld electric mixer {slowly at first so cocoa powder and sweetener doesn't go flying everywhere}, mix together the coconut cream and all the other ingredients. Continue to whip for about two minutes or until mixture is thick, smooth, and fluffy. If necessary, add some of the coconut water 1/2 teaspoon at a time until the desired thinner consistency has been achieved.
